Mocha Cake

Chocolate and coffee are THE perfect combination. Mocha cake is a very popular dessert among coffee lovers. With this mocha cake recipe, you're going to surprise more than one! Whether you fancy making a special dessert for Christmas or a not-too-fussy cake for an afternoon with friends: this cake is just what you need. It's simple, but impressive. Plus, it's quite rich so a little one will suffice. Your guests will love this delicious mocaccino-flavored cake!

L'OR choco mocha cake

Ingredients

For a 26 cm mould

For the mocha cake base:

350 grams whole wheat chocolate biscuits (or biscuits of your choice)

125 grams butter

For the ganache (filling):

200 ml crème fraiche

40 ml espresso – opt for L'OR Espresso Forza capsules an intense coffee with hints of chocolate.

250 gr dark chocolate, cut into pieces

1 tbsp honey

50 gr butter

For the chocolate whipped cream (filling):

250 ml whipped cream

2 tbsp cocoa powder

2 tbsp sugar

4 tbsp water

1 packet of whipped cream fixative

Preparation of the mocha cake

    Melt the butter in a saucepan.

    Crumble the cookies. For example in a food processor or with a mortar and pestle.

    Mix the crumbled biscuits with the melted butter.

  4. 4

    Line the pan with parchment paper. Spread the biscuit mixture in the pan to cover the bottom and edges.

    Press down with a spoon. Put the pan in the fridge for at least 10 minutes.

You can now prepare the cake filling which will consist of mocha ganache:

    Brew a cup of coffee of your choice. We advise you to use L'OR Espresso Forza capsules L'OR Espresso Forza beans: an intense coffee with chocolate notes. It goes very well with the other ingredients in the cake.

    In a saucepan, mix the cream with the honey and bring to a boil. Add 40 ml of coffee.

    Put the chocolate chunks in a bowl. Pour in the boiling cream-coffee mixture. Stir until the chocolate has melted.

    Add the butter. Use a hand mixer to make a ganache.

  5. 5

    Remove the base of the mocha cake from the fridge and pour the ganache over the top.

    Let it sit in the fridge for at least 2 hours.

The base of your mocha cake is now ready. You can add a topping of your choice. Why not opt for whipped cream, chocolate whipped cream, or coffee whipped cream? The recipe for chocolate whipped cream can be found below. For the coffee whipped cream, replace the cocoa with instant coffee.

For the chocolate whipped cream filling:

    Mix cocoa, sugar and water together until it forms a paste.

    Stir in cream and whipped cream stabilizer.

  3. 3

    Using a mixer or food processor, beat the chocolate cream mixture.

  4. 4

    Once the chocolate whipped cream forms small "peaks", it's ready

  5. 5

    Use the chocolate whipped cream to decorate the mocha cake.

    You can optionally sprinkle the cream filling with chocolate shavings.

    Serve your cake.
